It’s a Boy – Whipped Vanilla Dream Cupcakes

This past Christmas has been one that I will never forget. I received the best Christmas present and became an aunt! My nephew, Ezekiel James entered the world on Christmas morning at 11:39. He is a healthy and beautiful little bundle of joy.  It was an incredible Christmas blessing!

In honor of my sweet nephew, I made Sweetapolita’s Whipped Vanilla Dream Cupcakes. These whipped-creamy cupcakes were a nice substitute from the typical buttercream frosting. These are perfect for baby or wedding showers! Go ahead – give them a try!

Peppermint Milkshakes

Christmas is almost here!! I am so excited! Our tree is up, the presents are wrapped, and the baking is done. This peppermint milkshake is an easy, festive and very tasty treat.

Peppermint Milkshakes

Yields 3 Cups

Ingredients:

2 Cups Vanilla Ice Cream

3 Tablespoons finely crushed peppermint candies

Optional Toppings: whipped cream and crushed peppermint candies

Instructions:

  1. 1. Process first 3 ingredients in a blender until smooth. Pour into glasses, and serve with desired toppings.

Red Velvet Cheesecake Cookies

Earlier this week my husband and I became home owners! We are very excited about our new move, but we have a lot of work to do! We have spent every night this week painting and  working on different projects. (Before and after pictures to come!)

Despite all of the chaos and busyness, I could not let this season pass by without making my all time favorite Christmas cookies! These red velvet cheesecake cookies are beyond delicious, pretty and perfect for the holiday season. I am telling you that you have to make these cookies. Trust me, you will not regret it.

Holiday Baking

My sister is finally home from college for winter break!  We didn’t waste any time and started our Christmas baking right away. We decided to branch out from our typical holiday baking and try some new recipes. We used cookie recipes from one of my favorite blog’s twopeasandtheirpod.

We made brown butter snickerdoodles, oreo white chocolate pudding cookies and white chocolate gingersnaps. They were all delicious, but the soft gingersnaps were my favorite. I would definitely recommend trying any of twopeasandtheirpod cookie recipes. They are all SO good!

Peanut Butter Chocolate Balls

      There are only two more weeks until Christmas! This is my absolute favorite time of the year. I love gift giving, baking holiday recipes, celebrating traditions and spending time with family.  However, what makes this time of year truly wonderful is celebrating the birth of Jesus Christ.
     It’s easy to get caught up in all of the hubbub that this season brings, but don’t lose your sense of awe and wonder for our Savior. May you learn the “practice of the pause” (as Ann Voskamp says) and be filled with peace and joy as you are increasingly aware of the presence of Christ.
    I hope you enjoy my mom’s recipe for peanut butter chocolate balls. I must say that peanut butter and chocolate are by far my favorite combination!

Mexican Rice Bowl

My husband and I eat a lot of Mexican food. It always sounds good to me. We eat a lot of quesadillas, burritos, enchiladas and guacamole. This Mexican Rice Bowl is definitely my kind of meal. You may notice that I did not include ingredient measurements because I never measure for this recipe. It is that easy! We like to make individual bowls so that we can each add our own favorite toppings.

Ingredients:

Rice, cooked
Black beans, drained
Tomatoes, diced
Red onion, diced
Cilantro, chopped
Avocado, sliced
Fresh lime juice
Chicken, cooked (optional)

Instructions:

  1. Add rice to a bowl or plate. Top with black beans, tomatoes, onion, chicken, cilantro, and avocado slices. Squeeze fresh lime juice over the entire dish. Serve warm. Enjoy!

 

Zesty Quinoa Dip

Did you know that quinoa (KEEN-WHA) is one of the most complete proteins you could eat? It is a great source of dietary fiber, calcium, and phosphorus. It is also very high in magnesium and iron. Not only has quinoa become highly appreciated for its nutritional value, it is also incredibly tasty! There are so many different quinoa recipes, but this zesty quinoa dip is definitely my favorite!
