White Chocolate Mousse

White Chocolate Mousse

Yields 4 to 6 servings; recipe from “Joy the Baker” cookbook


2 Tablespoons water

2 Tablespoons unsalted butter

6 oz. white chocolate chips

1 1/2 cups heavy cream

2 teaspoons powdered sugar

Pinch of salt

1 egg yolk, beaten

Sprinkles (optional)


  1. Over medium-low heat, combine water, butter and white chocolate in a medium saucepan. Stir until chocolate chips are melted. Remove from heat. 
  2. Using a mixer (preferably fitted with a whisk attachment) combine cream, sugar and salt. Begin with the mixer speed on medium and gradually increase until soft peaks form.
  3. Whisk in the egg yolk into the chocolate mixture until combined. Add half of the chocolate mixture to the whipped cream mixture. Fold together. Add remaining chocolate mixture and fold together. Try not to over mix. Transfer mousse to a smaller bowl. Place a piece of plastic wrap over the mousse and refrigerate for at least 2 hours before serving.
