Spinach Pesto

This is one of my favorite recipes. I probably make it once a week.  I use this pesto sauce for pasta, pizza, sandwiches, etc. It is easy, quick and healthy.


Spinach Pesto
 Adapted from Everyday Food

1/2 Cup almonds
1/2 Cup grated Parmesan cheese
4 Cups fresh spinach leaves
1 garlic clove
1/2 Cup olive oil
Coarse salt and ground pepper

  1.  Preheat oven to 350 degrees. Evenly spread the almonds on a rimmed baking sheet. Allow nuts to toast in oven for 8-10 minutes. Let cool.
  2. Combine almonds, spinach, Parmesan, and garlic in a food processor. Season generously with salt and pepper. Process until nuts are finely chopped and mixture is smooth.
  3. Add pesto sauce to pizza, pasta, bread, etc. Enjoy!

Funfetti Cupcakes

Happy Funfetti Friday! Funfetti cupcakes always bring back childhood birthday memories. These were and still are my very favorite type of cupcake. These cupcakes are so soft, moist, and fluffy. They are bursting through the seams with colorful speckles. Trust me, these cupcakes are even better than the box. Now who’s throwing a party? : )

Cornmeal Molasses Pancakes with Blackberry Vanilla Sauce

“Remain in me, as I also remain in you. No branch can bear fruit by itself; it must remain in the vine. Neither can you bear fruit unless you remain in me..” – John 15:4

Throughout the Bible, the word “fruit” refers to evidence of what is within. As many of you know, the fruits of the Spirit are love, joy, peace, patience, kindness, goodness, faithfulness, gentleness and self-control. Although, I strongly desire to nurture and cultivate these fruits into my daily life, they do not come naturally to me.


“For the flesh sets its desire against the Spirit, and the Spirit against the flesh; for these are in opposition to one another, so that you may not do the  things that you please.” – Galatians 5:17

There is something that is continually getting in the way and that is the conflict between the flesh and the Spirit. These fleshly pursuits result in “deeds of the flesh” sins and vices, such as jealousy, strife, and outbursts of anger. It is vital to continually ask God to help you recognize your fleshly tendencies and weaknesses, so that you can submit them to Him, walk by the Spirit and seek to please Him with our thoughts, words, and actions.

Wedding Decor – Majon jars and Glow Sticks

The other night, my husband and I decided to watch one of our favorite movies; fireproof. This movie is filled with so many valuable themes and messages. It is such a good reminder that marriage is not based on romance or being in love.


This does not mean that romance itself or the desire for more romance is necessarily bad; good marriages work hard to preserve a sense of romance. But the idea that a marriage can survive on romance alone or that being in love is the most important consideration when choosing a spouse, has wrecked many marriages.


Marriage is a long time conversation and it goes through many different stages. Some of these are more difficult than others. Life presents us with some seasons that, quite frankly, must be endured. Fortunately, they are just seasons, and it is foolish to quit persevering during a time when any marriage will have to adapt and reevaluate previous expectations (Thomas).

Peanut Butter M&M Blondies

Peanut butter and chocolate will always be my favorite combination. This recipe is great because the blondies are easy to make, soft and chewy. The Valentine’s  M&M’s also add a nice festive touch.
