BBQ Chicken Pizza

26 Apr

It’s Friday! Lets celebrate with a delicious pizza recipe! With BBQ sauce on the bottom of the dough and  mozzarella cheese, BBQ chicken, red onions and cilantro on top, this pizza is a real winner. Hubs even declared it his new favorite pizza! It is that good. Bake the pizza until golden brown, let it sit for about 5 minutes before slicing and enjoy.

BBQ Chicken Pizza

Yields 2 pizzas; recipe from The Pioneer Woman

1 whole Recipe For Pizza Crust (mine Makes Two Crusts)

2 whole Boneless, Skinless Chicken Breasts

1/2 Cup Barbecue Sauce

Olive Oil

Salt For Sprinkling

16 ounces,  Fresh Mozzarella Cheese log, thinly sliced

1/2 whole Red Onion, Cut In Half And Sliced Very Thin

Chopped Cilantro, to taste

  1. Preheat oven to 375 degrees. Place chicken breasts in an ovenproof dish and salt on both sides. Pour BBQ sauce over the breasts and turn them over to coat. Bake until chicken is done – about 20 to 25 minutes. Remove from oven and cut into cubes. Set aside.
  2. Increase oven temperature to 400 degrees. Roll/stretch out one pizza crust. Lay it on a sheet pan drizzled with olive oil. Drizzle olive oil on the crust, then sprinkle on a little salt.
  3. Pour a couple of tablespoons of BBQ sauce on the crust and spread it evenly. Top sauce with half the sliced mozzarella. Sprinkle on half the diced chicken and thinly sliced red onion.
  4. Bake for 15 to 17 minutes, or until crust is golden brown. Remove pizza from the oven and sprinkle on lots of chopped cilantro. Cut and serve immediately. Repeat with other crust and other ingredients, or save for a later date. Enjoy!
