Strawberry Rhubarb Muffins

My sweet little nephew was recently dedicated at our church. After the service, our family had a big celebration brunch. My sister-in-law asked if I could bring muffins to the gathering and I knew these strawberry rhubarb muffins would be the perfect spring treat. Strawberries and rhubarb compliment each other perfectly and the oatmeal crumble topping gives it a little crunchy texture and adds wonderful fiber to the beginning of your day!

Blackberry Muffins

I am not really a morning person. I don’t like to get up any earlier than I have to. I usually don’t make breakfast on weekdays because of time and I actually like to eat cereal, but weekends call for something a little more extravagant for breakfast.

These muffins are bursting with fresh, plump blackberries. Moist and fluffy with just a hint of warm cinnamon to complement the sweet berries. They don’t take long to make and they help brighten the morning.

Browned Butter Blueberry Muffins

Happy Friday! I am in an excellent mood and here’s why… I started my day off with the most perfect blueberry muffins.  Straight forward. Simple. Spring. The berries are so plump and juicy and right there in every single bite. The delicious crumb topping is an excellent touch.

We currently have friends from Colorado staying with us and these muffins were a great company treat. There is no doubt I’ll be making this recipe many times to come!

Lemon Poppyseed Muffins

I spent this past weekend celebrating Easter in Oklahoma with my family. It was filled with fun activities, laughter, sunshine and of course delicious food.

These lemon poppy seed muffins are incredibly moist and the lemon glaze is the right amount of sweetness to top them off. These are simple muffins. You know these muffins. A little crunch from the poppy seeds. Sugary lemon glaze. It’s a marvelous thing.

We don’t have church until 11:15 on Sunday mornings.  During the week we are always rushing off to work, so Sunday morning is usually when we have our breakfast treats. The waffles are made with a mix of whole wheat and all-purpose flour. They are light, fluffy and very delicious!


We like to top the waffles with powdered sugar, sliced strawberries and whipped cream. And if you happen to have extra waffles leftover, place them in a freezer bag. They freeze wonderfully! Just pop them in the toaster when you are ready for a waffle fix.

Banana Bread

I have to be honest. I do not like bananas. It’s to the point where eating a banana is almost a phobia of mine. The smell, the texture – I’m feeling a little nauseous just talking about them. Growing up my parents even tried to get me to eat sliced bananas by putting sprinkles on them. Sorry Dad, it didn’t work.

Unfortunately my husband’s ONLY flaw is that he LOVES bananas. ; ) So despite my hatred for bananas, our home is usually filled with them. However, last week my husband was really sick and didn’t have an appetite. As a result, his precious bananas became overly ripe. Since I hate wasting food even more than I hate bananas, I knew I couldn’t just throw them  away. I had no choice but to make banana bread.


Let me tell you, I was blown away by the results. I must confess, I really like bananas when they are baked in bread! The crumb topping was an especially incredible surprise on the taste buds.  What a revelation! My husband couldn’t be happier and this is definitely a huge turning point in our marriage. : )

Lemon Raspberry Muffins

Despite the snow storm, I have spring fever. I am more than ready to welcome in spring weather and of course, recipes. I have been very excited to share this recipe with you – these muffins are oh so delicious! The sweet raspberries and tangy lemon zest are an incredible combination.
