30 May

I’ve gotten pretty bad at updating my blog. I blame it on the warm weather. Please forgive me.

Since it is still technically spring, I haven’t really moved on to my “summer” recipes quite yet. These oh-so-delicious carrot cake cookies are a perfect way to celebrate spring!!

Funfetti Cake Batter Ice Cream Cake

10 Apr

This past weekend we celebrated my dear friend’s birthday. It was a wonderful evening and it reminded me that birthdays really are important.

“Birthdays need to be celebrated.  I think it is more important to celebrate a birthday than a successful exam, a promotion or a victory.  Because to celebrate a birthday means to say to someone ‘thank you for being you’.  Celebrating a birthday is exalting life and being glad for it. On a birthday we do not say ‘thanks for what you did or said or accomplished’ no, we say ‘thank you for being born and being among us’.

On birthdays we celebrate the present.

We do not complain about what happened or speculate about what will happen but we lift someone up and let everyone say ‘we love you’.  Celebrating a birthday reminds us of the goodness of life and in this spirit we really need to celebrate people’s birthdays every day by showing gratitude, kindness, forgiveness, gentleness and affection.

These are ways of saying ‘it’s good that you are alive’; ‘it’s good that you are walking with me on this earth’, let’s be glad and rejoice.

This is the day that God has made for us to be and to be together.”

Cream Cheese Pound Cake

22 Jan

Long weekends are the best. My husband and I had big plans to tackle several “house projects” together, however, instead we found ourselves sleeping in, relaxing by the fire, and watching football. We never did get around to any of our projects, but that’s OK. I’m glad we were able to just relax and spend quality time together.

One morning we slept especially late, stayed in our pajamas all day, drank tea and ate some pound cake. Successful day in my opinion. ; )  But really – this cream cheese pound cake is amazing. I was so pleased with the results. It is so moist and delicious.  You can eat it for breakfast or dessert. It is really easy to make and great for entertaining company!

Gram’s Coffee Cake

10 Jan

I am not a coffee drinker. I don’t even really like the smell of it. Come to think of it, the only beverage I do drink is water. It is the perfect thirst quencher! I do enjoy a good coffee cake though, maybe because there is no coffee actually involved. : )

Mornings in the Midwest have been especially chilly lately. It’s always nice to warm things up by turning on the oven. My great-grandmother’s coffee cake is very moist, thanks to the sour cream and butter. The cake is simple to make, but pretty enough to serve to a crowd.  I hope your mornings start to warm up a bit!
