Since it is still technically spring, I haven’t really moved on to my “summer” recipes quite yet. These oh-so-delicious carrot cake cookies are a perfect way to celebrate spring!!

Funfetti Cake Batter Ice Cream Cake

10 Apr

This past weekend we celebrated my dear friend’s birthday. It was a wonderful evening and it reminded me that birthdays really are important.

“Birthdays need to be celebrated.  I think it is more important to celebrate a birthday than a successful exam, a promotion or a victory.  Because to celebrate a birthday means to say to someone ‘thank you for being you’.  Celebrating a birthday is exalting life and being glad for it. On a birthday we do not say ‘thanks for what you did or said or accomplished’ no, we say ‘thank you for being born and being among us’.

On birthdays we celebrate the present.

We do not complain about what happened or speculate about what will happen but we lift someone up and let everyone say ‘we love you’.  Celebrating a birthday reminds us of the goodness of life and in this spirit we really need to celebrate people’s birthdays every day by showing gratitude, kindness, forgiveness, gentleness and affection.

These are ways of saying ‘it’s good that you are alive’; ‘it’s good that you are walking with me on this earth’, let’s be glad and rejoice.

This is the day that God has made for us to be and to be together.”

Funfetti Cupcakes

22 Feb

Happy Funfetti Friday! Funfetti cupcakes always bring back childhood birthday memories. These were and still are my very favorite type of cupcake. These cupcakes are so soft, moist, and fluffy. They are bursting through the seams with colorful speckles. Trust me, these cupcakes are even better than the box. Now who’s throwing a party? : )

Peanut Butter M&M Blondies

13 Feb

Peanut butter and chocolate will always be my favorite combination. This recipe is great because the blondies are easy to make, soft and chewy. The Valentine’s  M&M’s also add a nice festive touch. If you share my love for peanut butter and chocolate desserts, you have to make these Peanut Butter M&M Blondies. Happy (almost) Valentine’s Day! : )

These pretty pink cookies are a great way to celebrate Valentine’s day, baby girls or simply treasured friendships.

Snickers Surprise Cookies

28 Jan

I do not like surprises. In 7th grade, my parents threw me a surprise birthday party.  They sent me to the garage to get something and out popped 15 of my close friends.

I started to cry. Strange reaction, I know. I guess I was just in shock. The party ended up being very fun and I really appreciated the great lengths my parents went to in order to make me feel special.  However, I kindly asked them never to throw me a surprise party again.

Although I usually don’t like being caught off guard,  I can handle cookie surprises. : ) photo(2)This chocolate, caramel, peanut surprise is perfect.
