Grilled Chicken Fajita Kabobs

Is it really August already?! This summer (like every other summer) has gone by way too fast. I really love being able to fire up our grill and eat outside, so I am trying to make the most of it during this last month of summer.  My husband has become quite the grill master, so it’s been nice working as “team” towards our dinners. : ) These Grilled Chicken Fajita Kabobs are not only colorful, but have a delicious marinade that is easy to make.


BBQ Chicken Pizza

It’s Friday! Lets celebrate with a delicious pizza recipe! With BBQ sauce on the bottom of the dough and  mozzarella cheese, BBQ chicken, red onions and cilantro on top, this pizza is a real winner. Hubs even declared it his new favorite pizza! It is that good. Bake the pizza until golden brown, let it sit for about 5 minutes before slicing and enjoy.

Sesame-Pineapple Chicken Stir-Fry

Mondays are the hardest days for me to make dinner. After the weekend it’s hard to get back into the grind. Dinner has to be easy on Mondays. My new favorite easy meal is this sesame pineapple chicken stir-fry. This 25-minute chicken stir-fry gets its sweet and colorful appeal from red peppers, chunky pineapples and sugar snap peas. It is the perfect Monday meal. :  )

Southwestern Steak Salad

Wait for the LORD; be strong and take heart and wait for the LORD.” -Psalm 27:14

Have you ever noticed that God is not in a hurry? In the Old Testament, God promised to bring his people out of Egypt and into a good and spacious land. But while “out of” the land of slavery and “into” the Promise Land sounds like a short trip, it actually took 40 years for Moses to receive his commission to lead the people out of Egypt.

Waiting is difficult. Being in the “land between” can be uncomfortable, frustrating and confusing. It’s often hard to understand why God, who is all powerful and can do whatever He wants, would choose to make us wait – especially when our desires and longings are good.


We are often more focused on the outcome than the process that He is accomplishing in our lives each day. I firmly believe that these times – the space where we feel lost or lonely or deeply hurt – is fertile ground for our spiritual transformation and for God’s grace to be revealed in magnificent ways. We must wait for God’s timing and embrace wherever we are in the process. When we find contentment in that place, we begin to experience God in ways we never thought possible.

“Yet the Lord longs to be gracious to you; He rises to show you compassion. For the Lord is a God of justice. Blessed are all who wait for Him!” Isaiah 30:18

Feta Chicken

“The steadfast love of the Lord never ceases;his mercies never come to an end;they are new every morning; great is your faithfulness.” -Lamentations 3:22-23

I love the meditations of this scripture. In the midst of sorrows and disappointments, these words bring me comfort and hope. It is the steadfast, unending, unfailing love of the Lord that gives strength each and every day. After days that I feel I’ve “exhausted” God’s mercy, I get another chance to experience the depths of that mercy when the sun rises again. His faithfulness truly is great.


This recipe is super easy to make, which makes it perfect for weeknight dinners. It is so simple, yet the flavor is fantastic. If you are looking for a good “go to” chicken meal, give this one a try.

Spinach Pesto

This is one of my favorite recipes. I probably make it once a week.  I use this pesto sauce for pasta, pizza, sandwiches, etc. It is easy, quick and healthy.


Spinach Pesto
 Adapted from Everyday Food

1/2 Cup almonds
1/2 Cup grated Parmesan cheese
4 Cups fresh spinach leaves
1 garlic clove
1/2 Cup olive oil
Coarse salt and ground pepper

  1.  Preheat oven to 350 degrees. Evenly spread the almonds on a rimmed baking sheet. Allow nuts to toast in oven for 8-10 minutes. Let cool.
  2. Combine almonds, spinach, Parmesan, and garlic in a food processor. Season generously with salt and pepper. Process until nuts are finely chopped and mixture is smooth.
  3. Add pesto sauce to pizza, pasta, bread, etc. Enjoy!
