Peanut Butter M&M Blondies

Peanut butter and chocolate will always be my favorite combination. This recipe is great because the blondies are easy to make, soft and chewy. The Valentine’s  M&M’s also add a nice festive touch. Peanut Butter and Oatmeal Chocolate Chip Cookies

         I didn’t make any healthy eating resolutions. My husband and I have always tried to eat healthy meals, but if you think we’re giving up sweets, you are crazy! For those of you who did make this resolution and are still going strong, I apologize for this temptation. : )
       Last night as my husband and I were watching Law and Order, I was overcome by an intense cookie craving. These “cookie cravings” are not unusual and occur daily, but last night I decided not to ignore them anymore. Jon even offered to help bake the cookies with me….which I later discovered meant help eat the cookie dough, while I made the cookies. Luckily, he did come through on the clean up. He is an all-star dish washer.
        I loved the oats, chocolate and peanut butter combination. These cookies really hit the spot.

Peanut Butter Chocolate Balls

      There are only two more weeks until Christmas! This is my absolute favorite time of the year. I love gift giving, baking holiday recipes, celebrating traditions and spending time with family.  However, what makes this time of year truly wonderful is celebrating the birth of Jesus Christ.
     It’s easy to get caught up in all of the hubbub that this season brings, but don’t lose your sense of awe and wonder for our Savior. May you learn the “practice of the pause” (as Ann Voskamp says) and be filled with peace and joy as you are increasingly aware of the presence of Christ.
    I hope you enjoy my mom’s recipe for peanut butter chocolate balls. I must say that peanut butter and chocolate are by far my favorite combination!

Pumpkin Chocolate Chip Cookies

Last Monday, I made cinnamon pumpkin pancakes for my husband’s birthday. Since I still had pumpkin leftover, I thought these cookies would be perfect to make for my brother and sister-in-law’s “moving party”.  The cookies were quickly devoured and big success!

Pumpkin Chocolate Chip Cookies

Yields 16 large cookies; recipe adapted from Mybakingaddiction

1 cup canned pumpkin
1 cup sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons cinnamon (I also added 1 teaspoon nutmeg)
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
