Although, I know summer does not officially start until later in the month, I am more than ready to start summer early!  There is just nothing better than a cold glass of strawberry limeade on a hot summer day. This is the perfect summer drink. It is very refreshing and so simple to make.

Strawberry Rhubarb Muffins

My sweet little nephew was recently dedicated at our church. After the service, our family had a big celebration brunch. My sister-in-law asked if I could bring muffins to the gathering and I knew these strawberry rhubarb muffins would be the perfect spring treat. Strawberries and rhubarb compliment each other perfectly and the oatmeal crumble topping gives it a little crunchy texture and adds wonderful fiber to the beginning of your day!

Strawberry Cheesecake Cookies

This past weekend, my husband and I spent some time with two of our dearest friends. It is always such a joy spending time with them.  They cooked us an incredibly delicious meal, while we provided dessert. These pretty pink cookies are a great way to celebrate Valentine’s day, baby girls or simply treasured friendships.

Homemade Pop-tarts

I am pretty sure that I hit the snooze button over five times this morning. I probably would have kept sleeping if my husband hadn’t so lovingly nudged me to please turn off my alarm and get out of bed. Bumping into walls with my eyes still closed, I somehow managed to get ready for work. My socks don’t match and my hair is slightly disheveled, but hey I made it on time. This routine is pretty typical for me…especially on Mondays.

After such a fun and relaxing weekend, it’s hard to switch gears. Mondays are usually hard days to maintain a joyful perspective.  I don’t know what you are  going through. Whether it is a broken relationship, illness, job loss, deep disappointment or even something as simple as a case of the Mondays, it’s easy to get brought down by the troubles of this life.

I hope that 1 Peter 5:8-10 (and of course these homemade pop-tarts) brings you inspiration and encouragement:

“Be alert and of sober mind. Your enemy the devil prowls around like a roaring lion looking for someone to devour. Resist him, standing firm in the faith, because you know that the family of believers throughout the world is undergoing the same kind of sufferings. And the God of all grace, who called you to His eternal glory in Christ, after you have suffered a little while, will himself restore you and make you strong, firm and steadfast.”
